DETAILED DESCRIPTION
The Isle of Noirmoutier is famous for its sea salt. Two-thirds of it is sea marsh. Situated in the Bay of Biscay in the Vendee region, the Isle is connected to the continent by the Gois Causeway. The sunny, almost tropical climate and constant gentle dry winds that assist evaporation make Noirmoutier ideal for producing it. The Isle is a national nature preserve and environmentally protected. The name Noirmoutier means 'black monastery' derived from the black robed monks who inhabited the island in mediaeval times. They're credited as first to hand harvest salt there using Celtic methods that remain largely unchanged today.
Atlantic waters flow into Noirmoutier's rectangular, hard sun-baked man-made clay pools. Two days of evaporation from sun and wind create large coarse crystals called 'sel gros'. The crystals are light gray from the clay. They are harvested by the 'saunier' or salt harvester using long rakes to gather the crystals. Using strong, swift strokes the saunier draws crystals to one side of the pool. Every two days the saunier collects small amounts and adds it to the pile that becomes several feet high as the harvest season progresses. The coarse salt is dried and stone ground to medium size to produce EDEN Sea Salt. No further processing, washing, or additives are involved, and it is never blended. This traditional Celtic process seals in a wealth of trace elements and produces the most delicious sea salt in the world.
Noirmoutier islanders take pride in the purity and taste of their salt, just as citizens of Bordeaux take pride in their wine. Their craft has been handed down through generations and the island possesses unique qualities producing one of the most exquisite salts in the world. EDEN Sea Salt is certified by ACTOA (L'Association de Controle Tiers Ouest Atlantique), 'Selection du Saunier.' This organization certifies that the region of Noirmoutier maintains a pure, unpolluted environment suitable for organic agriculture and also respects the Standards of Salt.
The market is awash with imitation sea salts that have little in common with the likes of EDEN unrefined sea salts. Almost all food processors use these because they're so cheap in comparison and they can get away with it. The difference is the taste, nutrients, and physiological effects.
EDEN Sea Salt is lower in sodium and higher in calcium than other salts. This gives a smooth, savory flavor. It is sea salt in its natural state with trace elements almost identical to the sea. Iodine is not stripped out and then 'fortified' back in. EDEN Sea Salt is packed in glass to protect it from absorbing moisture.

Truly Market ships from our shop in Markham, Ontario. Pickup is available in store. Rates below are in CAD and shown at checkout before you pay.
Order processing
We pack online orders at Truly Market — First Markham Place on business days. The shop is closed Saturday, so orders placed Friday evening or Saturday are packed on Sunday or Monday depending on timing. You will get an email when your order is on its way or ready for pickup.
GTA delivery
We offer Complimentary GTA Delivery on orders of $150 CAD or more (before tax) to selected GTA areas. Delivery is $0 when your address qualifies at checkout. If the cart is under $150, or your address is outside the eligible areas, checkout will show our regular Canada shipping instead.
Canada-wide shipping
We ship across Canada for a flat $15 CAD, typically 3–9 business days after we pack the order. Canada Post options may also appear at checkout depending on the destination. Complimentary GTA Delivery does not replace this rate outside eligible GTA areas, or on carts under $150.
U.S. shipping
United States Shipping — Temporarily Paused
Due to ongoing uncertainty surrounding U.S. tariffs, customs requirements, and import restrictions, we have temporarily paused shipping to the United States.
We are closely monitoring the situation and hope to resume U.S. shipping once the requirements become clearer and we can ensure a smooth and reliable delivery experience for our customers.

International shipping
Hong Kong and Macau: Flat rate $25 CAD, typically 5–10 business days after we pack the order. Complimentary free shipping applies on orders of $600 CAD or more (before tax) to Hong Kong and Macau.
Other international destinations: $30 CAD, typically 6–10 business days. Customs fees, duties, and import taxes are the customer’s responsibility. We do not ship to every country; unavailable destinations will not show a rate at checkout.
Estimated delivery times
- Pickup at the Markham shop: ready on a business day after we pack, during store hours.
- Complimentary GTA Delivery: usually a few business days after packing. We will email you when it is out for delivery.
- Canada: 3–9 business days after packing.
- Hong Kong / Macau: 5–10 business days after packing.
- Other international (outside the U.S.): 6–10 business days after packing, plus any customs clearance. U.S. shipping is temporarily paused.
Times start when the order leaves the shop, not when you check out. Perishable and refrigerated items may be held so they travel on the next suitable day.
Tracking
When your order ships, you will receive a confirmation email with a tracking number and carrier link when the carrier provides one. Local GTA deliveries and in-store pickup may not have a public tracking number; we will still email you when the order is packed or out for delivery. Check spam if you do not see it, or email us with your order number.
Delays and delivery issues
Weather, carrier volume, incorrect addresses, and customs can add time. If a package is marked delivered and you cannot find it, check with neighbours and your building, then contact us within 48 hours and we will open a carrier trace. We are not responsible for delays or fees once a parcel is with the carrier or in customs, but we will help you follow up.
If we packed the wrong item or something arrives damaged, photograph the parcel and email us. Food, supplements, and personal care that have been opened generally cannot go back; see our refund policy.
