For this premium product, we choose, cut and utilize only the flavorful and tender prime loin of the salmon fillet, also know as the "royal" or "tsar" cut. Furthermore, we manually remove most of the greyish/brown bloodline from each fillet before slicing, resulting in a cleaner slice with a more uniform flavor and texture.
